- 1 1/2 lbs fingerling potatoes
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika regular paprika is fine too
Preheat oven to 425 degrees Fahrenheit.
Wash fingerling potatoes.
Cut the potatoes in half length-wise.
Toss the potatoes with 2 tablespoons olive oil, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder and 1/2 teaspoon smoked paprika.
Place the potatoes on a rimmed baking sheet and bake for 20-25 minutes, until tender, making sure to flip the potatoes halfway through baking.
