- 8 ounces pasta - rotini, penne, or bow tie
- 8 ounces fresh mozzarella pearls or mini pearls
- 8-10 ounces cherry tomatoes or grape tomatoes halved or quartered depending on size
- ½ cup fresh basil leaves, chopped
- 10 ounces balsamic vinaigrette salad dressing
- balsamic glaze for drizzling
Prepare pasta to al dente according to package directions, making sure to salt the pasta water. Drain, then allow the pasta to cool completely. You can place the pasta in the refrigerator to help the cooling process along.
Prepare the vegetables: halve or quarter the cherry tomatoes so that they are bite-sized. Chop the fresh basil.
Prepare the mozzarella pearls: consider halving the mozzarella pearls if they are larger than bite-sized. If using mini mozzarella pearls, you will not need to cut them.
When the pasta has cooled completely, combine it with the tomatoes, basil, mozzarella and dressing.
Cover and chill in the refrigerator for at least 1-2 hours or overnight.
Just before serving, drizzle the pasta salad with balsamic glaze.
