Apple Cider Vinaigrette Dressing

- 1 cup apple cider
- 2 tablespoons apple cider vinegar
- ⅓ cup olive oil
- 1 T Honey
- 1 tablespoon shallot - finely chopped
- 1 clove garlic minced
- 2 teaspoons dijon mustard
- ¼ teaspoon salt
- ½ teaspoon chopped fresh thyme
- ¼ teaspoon black pepper
Boil apple cider for 10-15 minutes, or until it’s reduced to between ½ cup and ⅓ cup.
Remove from heat and allow it to cool for about 10-15 minutes in the refrigerator.
Whisk in apple cider vinegar, olive oil, honey, shall, garlic, dijon mustard, salt, black pepper, and chopped fresh thyme.
Adjust to taste - thin it out with olive oil if needed, add a little honey if you would like it more sweet. Adjust salt and pepper to taste.
Serve immediately or store in an airtight container for up to 7 days.
