Pizza Potato Skins

Pizza Potato Skins combine the best of both worlds: crispy potato skins and classic pizza toppings!

Ingredients

  • 4 russet potatoes - medium sized
  • 2 tablespoons butter
  • salt and pepper
  • pepperoni slices
  • 8 ounces mozzarella cheese - freshly grated or combination of cheddar and mozzarella
  • 1 cup pizza sauce or marinara
  • 1 teaspoon Italian seasoning
  • additional pizza toppings - olives, green peppers, onions, etc.

Instructions

  • Prepare the potatoes: scrub 4 medium-sized potatoes and poke holes in them. Bake in a 400 degree oven for 45-60 minutes - until tender. Allow the potatoes to cool enough to handle them.
  • Preheat the broiler to high.
  • Prepare the potato skins: cut each potato lengthwise into three pieces, discarding the middle slice. Scoop out most of the pulp, leaving about ΒΌ inch of potato in the skin.
  • Melt 2 tablespoons of butter and brush both sides of the potato skins. Season with salt and black pepper.
  • Broil for 8 minutes, flipping halfway through to crisp both sides.
  • Add toppings: add mozzarella cheese and pepperoni slices. Sprinkle each potato skin with Italian seasoning.
  • Return to the broiler for 2-4 minutes, or until the cheese has melted.
  • Serve with warm pizza sauce or marinara sauce for dipping.
