Prepare the potatoes: scrub 4 medium-sized potatoes and poke holes in them. Bake in a 400 degree oven for 45-60 minutes - until tender. Allow the potatoes to cool enough to handle them.
Preheat the broiler to high.
Prepare the potato skins: cut each potato lengthwise into three pieces, discarding the middle slice. Scoop out most of the pulp, leaving about ΒΌ inch of potato in the skin.
Melt 2 tablespoons of butter and brush both sides of the potato skins. Season with salt and black pepper.
Broil for 8 minutes, flipping halfway through to crisp both sides.
Add toppings: add mozzarella cheese and pepperoni slices. Sprinkle each potato skin with Italian seasoning.
Return to the broiler for 2-4 minutes, or until the cheese has melted.
Serve with warm pizza sauce or marinara sauce for dipping.
