Easy Grilled Peaches

Ingredients

  • 4 ripe peaches
  • 1/3 cup unsalted butter melted
  • 2/3 cup soft brown sugar
  • 2 tsp ground cinnamon
  • 1/4 cup heavy cream
  • Pinch of salt
  • To Serve optional: A few shredded mint leaves, Creme fraiche, Greek yogurt (optional), ice cream or whipped cream

Instructions

  • Heat the grill or grill pan: Preheat a grill, grill pan or griddle over medium-high heat.
  • Prepare the peaches: Cut each peach in half and remove the stone. Brush the cut sides with the melted butter.
  • Grill the peaches: Place the peaches on the grill, cut side down. Cook for 3–4 minutes until the peaches soften slightly and you see grill marks.
  • Mix cinnamon sugar: In a small bowl, combine the brown sugar and cinnamon.
  • Dip peaches in cinnamon sugar: Using tongs, pick up each peach half and dip the cut side into the cinnamon sugar, coating it well. Place the peaches back on the grill, cut side down. Cook for another 1–2 minutes until the sugar caramelizes. There’s no need to flip them over.
  • Make the caramel sauce: Pour the leftover butter and sugar from the bowl into a small saucepan. Heat over medium-high heat, stirring occasionally, until the sugar starts to melt (it may separate at first). Remove from heat and stir in the heavy cream and a pinch of salt until the sauce is smooth and combined. Pour the sauce into a small jug.
  • Serve: Arrange the grilled peaches on a plate. Drizzle with the warm caramel sauce, sprinkle with shredded mint leaves, and add a spoonful of creme fraiche, Greek yogurt, whipped cream or ice cream if you like.
