Garlic Butter Steak and Potatoes

Garlic butter steak bites feature mouthwatering bite sized pieces of steak coated in a rich and flavorful garlic butter sauce.

Ingredients

  • 1.5 lbs beef stew meat
  • 1 cup beef stock or broth
  • 2 tbsp Worcestershire
  • 1 packet Lipton Onion Soup Mix Packet
  • 1 packet ranch dressing packet (3 tablespoons)
  • 1 lb mini gold potatoes
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 6 tbsp butter
  • 5 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped

Instructions

Instant Pot Instructions

  • Add beef stew meat to the Instant Pot, then cover with beef stock or beef broth.
  • To the Instant Pot add in Worcestershire sauce, Onion Soup Mix packet, and ranch dressing packet. Stir to combine.
  • Add mini gold potatoes on top of the beef. Secure the lid. Select manual - then high pressure and cook for 25 minutes.
  • Allow the pressure to release naturally for 15 minutes.
  • While the pressure releases, in a small bowl mix together 1 tablespoon cornstarch with 1 tablespoon cold water. Set aside.
  • Add butter, garlic and chopped fresh parsley to a microwave safe bowl. Heat in 30 second increments until the butter has melted. Stir to combine.
  • After the pressure has released for 15 minutes, open the Instant Pot and remove the steak bites.
  • Make the gravy for the potatoes: Set the Instant Pot to Sauté on high. To the remaining broth in the Instant Pot, stir in the cornstarch and water slurry and whisk to combine. Continue to whisk and stir until the broth has thickened.
  • Toss the steak bites with garlic butter.
  • Use the thickened broth as a gravy for the potatoes if you wish.
  • Garnish with additional chopped fresh parsley.

Slow Cooker Instructions

  • Add beef stew meat to the Slow Cooker, then cover with beef stock or beef broth.
  • To the Slow Cooker add in Worcestershire sauce, Onion Soup Mix packet, and ranch dressing packet. Stir to combine.
  • Add mini gold potatoes on top of the beef, then place the lid on the slow cooker.
  • Cook on low heat for 7-8 hours or on high heat for 5-6 hours.
  • Make the gravy for the potatoes: 30 minutes before it's done cooking, combine 1 tablespoon cold water with 1 tablespoon cornstarch. If cooking on low, increase the slow cooker heat to high. Stir this mixture into the Slow Cooker to thicken the broth.
  • Add butter, garlic and chopped fresh parsley to a microwave safe bowl. Heat in 30 second increments until the butter has melted. Stir to combine.
  • Remove the meat from the slow cooker and toss with garlic butter mixture.
  • Use the thickened broth as gravy for the potatoes if you wish.
  • Garnish with additional chopped fresh parsley.
