Add beef stew meat to the Instant Pot, then cover with beef stock or beef broth.
To the Instant Pot add in Worcestershire sauce, Onion Soup Mix packet, and ranch dressing packet. Stir to combine.
Add mini gold potatoes on top of the beef. Secure the lid. Select manual - then high pressure and cook for 25 minutes.
Allow the pressure to release naturally for 15 minutes.
While the pressure releases, in a small bowl mix together 1 tablespoon cornstarch with 1 tablespoon cold water. Set aside.
Add butter, garlic and chopped fresh parsley to a microwave safe bowl. Heat in 30 second increments until the butter has melted. Stir to combine.
After the pressure has released for 15 minutes, open the Instant Pot and remove the steak bites.
Make the gravy for the potatoes: Set the Instant Pot to Sauté on high. To the remaining broth in the Instant Pot, stir in the cornstarch and water slurry and whisk to combine. Continue to whisk and stir until the broth has thickened.
Toss the steak bites with garlic butter.
Use the thickened broth as a gravy for the potatoes if you wish.
Garnish with additional chopped fresh parsley.
