Banana Pudding

- 1 (3.4oz) box instant vanilla pudding
- 1 (14oz) can sweetened condensed milk
- 1 ½ cups cold milk (2% or whole milk)
- 3 cups heavy whipping cream
- 4 ripe bananas
- 2 tablespoons lemon juice
- 12 ounces vanilla wafers/cookies
Make the pudding base: in a large mixing bowl, whisk together 1 - 3.4 ounce box of instant vanilla pudding mix with 1 - 14 ounce can sweetened condensed milk and 1 ½ cups cold milk.
Whip the cream: In a separate bowl, beat 3 cups heavy whipping cream on high speed until stiff peaks form. Gently fold the whipped cream into the chilled pudding mixture until light and fluffy.
Prepare the bananas: slice 4 ripe bananas into thin rounds. Toss the slices of bananas with 2 tablespoons lemon juice to help prevent browning. Set aside.
Assemble the pudding: In a trifle bowl, 9x13 inch pan, or individual serving cups, layer the ingredients in this order:1. A layer of vanilla wafers2. A layer of banana slices3. A layer of the pudding-whipped cream mixture.Repeat the layers two more times, finishing with a layer of pudding on top. Garnish and chill: Top with extra wafers or banana slices if desired. Cover and refrigerate for at least 3 hours before serving. For best texture and appearance, serve within 8 hours of assembling.
The pudding will last 2-3 days in the fridge, but bananas may brown and soften over time.
