One Pan Sausage and Potatoes

One Pan Sausage and Potatoes is a simple and easy supper recipe made entirely in one pan. It takes only 10 minutes to prep the sausage and vegetables, and with just one pan, clean-up is a breeze! Ready in under 30 minutes!

Ingredients

  • 1 lb kielbasa or smoked sausage cut 1/2" thick rounds
  • 2 lbs small red potatoes cut into bite-sized pieces
  • 2 red bell peppers cut into strips
  • 1/2 pounds fresh green beans rinsed and ends trimmed
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • chopped fresh parsley for garnish
  • freshly grated parmesan cheese for garnish optional

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Chop sausage and veggies into bite-sized pieces.
  • Line a large-rimmed baking sheet with aluminum foil. 
  • Add sausage and veggies to the pan.
  • Toss with olive oil, salt, pepper, and garlic powder. 
  • Bake for 25-30 minutes, flipping the sausage and veggies about halfway through.
  • Top with freshly chopped parsley or finely grated parmesan cheese.
  • Store leftovers in an air-tight container in the refrigerator for about a week.
