- 1 lb kielbasa or smoked sausage cut 1/2" thick rounds
- 2 lbs small red potatoes cut into bite-sized pieces
- 2 red bell peppers cut into strips
- 1/2 pounds fresh green beans rinsed and ends trimmed
- 2 tbsp extra virgin olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- chopped fresh parsley for garnish
- freshly grated parmesan cheese for garnish optional
Preheat oven to 400 degrees Fahrenheit.
Chop sausage and veggies into bite-sized pieces.
Line a large-rimmed baking sheet with aluminum foil.
Add sausage and veggies to the pan.
Toss with olive oil, salt, pepper, and garlic powder.
Bake for 25-30 minutes, flipping the sausage and veggies about halfway through.
Top with freshly chopped parsley or finely grated parmesan cheese.
Store leftovers in an air-tight container in the refrigerator for about a week.
