German Potato Salad

This old fashioned hot German potato salad recipe can be made with or without bacon.

Ingredients

  • 2 pounds potatoes (Yukon gold or Russets) peeled, cleaned and cut into bite sized pieces
  • 1 tablespoon salt
  • 6-8 strips bacon diced
  • 1 onion diced
  • 2 tablespoons stone ground mustard or dijon mustard
  • 1/2 cup white vinegar or apple cider vinegar
  • 1/2 cup green onions chopped
  • 1 tablespoon granulated sugar
  • salt and black pepper to taste

Instructions

  • Add cubed potatoes to a large pot and cover with cold water. Add 1 tablespoon salt to the pot, then boil potatoes until they are fork tender. Drain potatoes and set aside.
  • In a pan cook bacon until golden brown. Remove the bacon with a slotted spoon reserving the fat in the pan.
  • Add onions to the bacon fat and saute for 2-3 minutes until just cooked.
  • In the same pan, add mustard, vinegar and sugar. Bring this to a quick boil and simmer for a few minutes until the sauce reduces to half.
  • Switch off the flame, and add bacon, potatoes and green onions to the pan and toss well. Season to taste with salt and black pepper.
  • Transfer the salad to a bowl and serve warm. If you prefer, you can refrigerate for 2-3 hours and serve cold.
