Instant Pot Chicken Fajitas

  • 1 Pressure Cooker (Instant Pot)

Ingredients

  • 1.5-2 pounds boneless skinless chicken breasts thinly sliced
  • 1 medium yellow onion
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 packet taco seasoning
  • ¼ cup chicken broth or water
  • toppings of your choice - sour cream, guacamole, pico de Gallo, etc.

Instructions

  • Prepare the chicken: trim excess fat from the chicken then slice the chicken against the grain into ¼" thick pieces.
  • Prepare the vegetables: cut a yellow onion and a red and green bell pepper into strips.
  • Arrange the chicken and vegetables in the inner pot of the Instant Pot.
  • Sprinkle with 1 packet taco or fajita seasoning (1 ounce).
  • Add in ¼ cup chicken broth or water.
  • Set the Instant Pot to sealing, then cook on the "manual" pressure setting on high for 4 minutes.
  • Quick release the pressure, then serve with your favorite toppings.
