- 1.5-2 pounds boneless skinless chicken breasts thinly sliced
- 1 medium yellow onion
- 1 large red bell pepper
- 1 large green bell pepper
- 1 packet taco seasoning
- ¼ cup chicken broth or water
- toppings of your choice - sour cream, guacamole, pico de Gallo, etc.
Prepare the chicken: trim excess fat from the chicken then slice the chicken against the grain into ¼" thick pieces.
Prepare the vegetables: cut a yellow onion and a red and green bell pepper into strips.
Arrange the chicken and vegetables in the inner pot of the Instant Pot.
Sprinkle with 1 packet taco or fajita seasoning (1 ounce).
Add in ¼ cup chicken broth or water.
Set the Instant Pot to sealing, then cook on the "manual" pressure setting on high for 4 minutes.
Quick release the pressure, then serve with your favorite toppings.
