Pumpkin Caramel Rice Krispies Treats

Ingredients

Pumpkin Caramel Sauce

  • 1 cup granulated sugar
  • 5 tablespoons butter
  • ½ cup heavy whipping cream
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon salt

  • 5 cups Rice Krispies cereal
  • 10 oz marshmallows
  • 4 tablespoons butter
  • cup pumpkin caramel sauce
  • ¼ cup pumpkin carmel sauce for the top

Instructions

Pumpkin Caramel Sauce Directions

  • Make the pumpkin caramel sauce: In a large skillet, cook sugar on medium heat until fully melted. It will start out dry, then start to clump, then become mostly melted and turn brown, then be smooth and brown.
  • Once it’s smooth, add butter and stir quickly. Mixture will bubble up.
  • Once butter is completely melted, add in the heavy whipping cream. Again the mixture will bubble, just continue to stir. Boil for 1 minute, then take it off the heat and add the pumpkin pie spice and salt. Stir to incorporate and pour into a heat safe container. Glass works best. Mixture is extremely hot so don’t be tempted to test it right away.

Pumpkin Caramel Rice Krispies Directions

  • Line a 9x9 square pan with foil and spray with non-stick spray; set aside.
  • In a large deep stock pot, melt butter on medium heat until completely melted. Add in the marshmallows and stir until they are melted and the mixture is smooth. Turn off the heat and add ⅓ cup pumpkin caramel sauce.
  • Stir in the Rice Krispies cereal and mix well, making sure that the cereal is evenly coated.
  • Gently press into the prepared pan in an even layer.
  • Top with ¼ cup pumpkin caramel sauce. Spread evenly.
  • Cool to room temperature, then cut and serve.
