- 1 lb small potato medley can substitute with baby red potatoes
- ½ lb baby carrots whole
- 1 tbsp olive oil
- ½ teaspoon ground black pepper
- ½ teaspoon salt
- 2 cloves garlic minced
- 2 tsp fresh thyme minced
Preheat the Oven: Preheat your oven to 425 degrees F and line a baking sheet with parchment paper or foil for easy cleanup.
Prepare the vegetables and herbs: Wash and dry the potatoes and carrots. Mince garlic and fresh thyme.
Combine: In a large bowl, toss the potatoes and carrots with olive oil, salt, black pepper, minced garlic and thyme.
Roast: Spread the seasoned vegetables evenly on the prepared baking sheet. Roast for 25-30 minutes, tossing halfway through to ensure that the vegetables roast evenly. The potatoes should be golden brown and the carrots should be tender.
Garnish with fresh thyme and serve.
