Breakfast Gravy

This country style sausage breakfast gravy is homemade and the perfect comfort breakfast to go with buttery, flaky biscuits!

Ingredients

  • 1 pound ground breakfast sausage
  • 1/4 cup all purpose flour
  • 3 1/2 cups milk
  • 1 teaspoon coarse black pepper
  • ½ teaspoon salt
  • 2 tbsp butter optional

Instructions

  • Brown the sausage: Add 1 pound breakfast sausage to a large skillet over medium heat and cook until brown. Leave the grease - it adds flavor and helps the gravy come together.
  • Make the roux: sprinkle flour over the cooked sausage, stir to combine and coat the sausage with flour. Cook for 1-2 minutes -- just long enough to get rid the the raw flour taste.
  • Add milk: Very slowly pour in the milk making sure to stir constantly. Bring to a simmer. This should take a few minutes. Reduce the heat to low, continue stirring. As it simmers, the gravy will thicken. This will take 5-10 minutes.
  • Season: add about ½ teaspoon of salt (more or less to taste) and about 1 teaspoon coarse black pepper.
  • Optional: add in 2 tablespoons butter for a little extra richness.
  • Serve the sausage breakfast gravy with buttermilk biscuits.

Notes

If the gravy gets too thick, stir in a bit more milk to thin it out.
