Cut baby red potatoes into bite sized pieces about- about 1 inch.
Soak potatoes in cold water for 30 minutes.
Dry potatoes well.
Preheat air fryer to 400 degrees F.
Place the potatoes in a bowl- to the bowl add in olive oil, salt, black pepper, garlic powder, onion powder, Italian seasoning and smoked paprika. Stir to combine.
Add the potatoes to the air fryer basket and air fry for 18-20 minutes or until the potatoes are crispy and golden brown.
Shake the basket halfway through cooking to ensure that the potatoes evenly crisp.
Garnish with green onion, rosemary, or any other fresh herbs that you enjoy.
