Easy Mini Meatloaves

Easy Mini Meatloaves with cheddar cheese and BBQ are quick, cheesy and packed with flavor. Ready in 30 minutes - perfect for busy weeknights!

Ingredients

  • 16 ounces ground beef or ground turkey
  • ½ cup Panko breadcrumbs
  • ½ cup shredded sharp cheddar cheese
  • 4 ounces milk
  • 2 tablespoons BBQ rub your favorite blend
  • BBQ sauce of choice for topping

Instructions

  • Preheat oven to 450°F. Line a baking sheet with parchment paper or foil for easy cleanup.
  • In a large mixing bowl, combine 16 ounces ground beef (or turkey), 1/2 cup Panko breadcrumbs, 1/2 cup shredded cheddar cheese, 4 ounces milk, and 2 tablespoons BBQ rub. Mix gently until just combined.
  • Divide the mixture into three equal portions and shape each into a loaf.
  • Place loaves on the prepared baking sheet and bake for 20–22 minutes.
  • Remove from oven and brush each loaf generously with BBQ sauce. Return to the oven and bake for an additional 4–5 minutes.
  • Let rest for 5 minutes before serving. Internal temperature should reach 160°F for beef or 165°F for turkey.
