Preheat oven to 400°F and line a baking sheet with parchment paper.
In a food processor, pulse together the 2 cups flour, 2 teaspoons baking powder, ½ teaspoon baking soda, 1 teaspoon salt, and 2 teaspoons sugar until well combined.
Add 6 tablespoons cold butter and pulse until the mixture resembles coarse crumbs with small pieces of butter throughout.
Pour in 3/4 cup buttermilk and pulse just until the dough begins to come together—don’t overmix.
Turn the dough onto a lightly floured surface. Gently pat it into a ¾-inch thick rectangle.
Use a 2½-inch round cutter to cut out biscuits. Re-roll scraps once if needed to cut a few more.
Place biscuits on the prepared baking sheet and bake for 12–15 minutes, until golden brown.
Serve warm with sausage gravy, butter, or jam!
