Garlic Parmesan Shrimp

A quick and easy healthy shrimp dinner recipe: Garlic Parmesan Shrimp.

Ingredients

  • 1 lb. medium shrimp peeled and deveined
  • 1 tbsp. olive oil
  • 3 cloves garlic minced
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • ΒΌ cup parmesan cheese finely grated
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 1/2 lemon, juiced
  • 2 tbsp. Italian parsley chopped

Instructions

  • Preheat your oven to 400 degrees.
  • Line a rimmed baking sheet with aluminum foil or parchment paper.
  • Place shrimp in a large mixing bowl, along with the olive oil, salt, pepper, garlic, oregano, basil, Parmesan, and lemon juice. Gently toss to combine.
  • Arrange shrimp on the prepared baking sheet in an even layer.
  • Bake for 8-10 minutes, or until shrimp are pink and no longer transparent. Do not overcook the shrimp.
  • Garnish with chopped parsley, and a squeeze of fresh lemon juice.
