Glazed Cranberry Bread

Glazed Cranberry Bread is moist and delicious - the perfect balance of sweet and tart bursting with fresh cranberries and topped with a citrus glaze.

Ingredients

BREAD INGREDIENTS

  • 8 oz cream cheese room temperature
  • ½ cup butter room temperature
  • 1 ½ cups granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 ½ cups flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoons salt
  • 2 cups cranberries chopped

GLAZE INGREDIENTS

  • 1 cup powdered sugar
  • 1 tablespoon orange juice or apple juice

Instructions

  • Preheat the oven to 350° and spray two loaf pans with non-stick spray and coat them with sugar. Set aside.
  • In a large bowl, cream together cream cheese, butter, and sugar. Stir until well combined.
  • Add in the eggs and vanilla and mix until incorporated.
  • Add in the flour, baking powder, and salt. Stir until just combined and no pockets remain, but do not overmix.
  • Fold in chopped cranberries.
  • Pour half of batter into each pan and bake for 40-45 minutes or until toothpick inserted in the center comes out clean.
  • Make the glaze: in a small bowl whisk together powdered sugar with orange juice or apple juice until smooth.
  • Once the bread is fully cooled, top with glaze.
