Here is a brief overview of how to make Irish Beef Stew, along with step-by-step photo. The full written recipe is in the recipe card below.
prepare and brown the beef:
Chop the beef into chunks, then brown it in batches so that the Instant Pot ins’t overcrowded. There will be browned bits on the bottom of the Instant Pot which only adds flavor! If you’re short on time, skip this step!
prep the veggies and sautรจ the onion and garlic
Cut carrots into rounds, cut baby carrots into half (or bite sized pieces depending on size), and chop an onion. Sautรจ the onion until soft and golden then add garlic and cook for a bit longer. Then add in tomato paste, fish sauce, and Worcestershire sauce.
deglaze with Guinness
Pour in the Guinness beer, scraping up any browned bits from the bottom. Add in broth, carrots and potatoes.

Add fresh thyme and a bay leaf, then pressure cook on high for 35 minutes. Allow the pressure to release naturally for 10 minutes, then carefully release any remaining pressure.
