CREAMY ITALIAN SAUSAGE SOUP IS ALL THE HYPE LATELY!

…at least in my house it is! When I know I have a pot of this delicious homemade Italian Sausage soup waiting for me in my fridge for lunch, I get ridiculously excited.

Small pasta shapes are the best option for soup. I didn’t have ditalini on hand which is what I’d typically use in this soup, so I used what I had. In addition to ditalini, orzo or small shells are great options. Additionally, orecchiette, rotini, or farfalle will hold shape well.

Along with the pasta you’ll add in chicken broth, diced tomatoes, and seasonings and simmer until the pasta is tender.

Adjust seasonings and serve. I love to serve this with garlic bread and a side salad or pair it with a turkey sandwich or something like my Turkey Pinwheels with Cream Cheese Spread.

  • Use Fresh Grated Parmesan – it melts better and adds delicious creaminess and flavor to the soup. I like to use a microplane grater for this task.
  • Choose the right pasta – small shapes work best! If you don’t have small pasta on hand, it’s ok. Large pasta shapes can be used, just know that they will soak up more broth and it will be a thicker soup.
  • variations – try making a spicy variation with spicy Italian sausage, and add 1-2 teaspoons of red pepper flake!

Creamy Italian Sausage Soup

This Creamy Italian Sausage Soup with pasta and parmesan cheese is comforting, delicious and ready in under 30 minutes!
Prep Time: 5 minutes
Cook Time: 25 minutes

Ingredients 

  • 1 tablespoon olive oil
  • 1 pound Italian sausage – ground
  • 1 cup yellow onion diced
  • 4 cloves garlic minced
  • ยฝ teaspoon salt more to taste
  • ยฝ teaspoon black pepper more to taste
  • ยฝ teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 14.5 ounces diced tomatoes
  • 1.5 cups small pasta (ditallini, orzo, or small shells work well)
  • 1 cup heavy cream
  • ยฝ cup finely grated parmesan cheese
  • Fresh basil for garnish
  • additional salt, pepper, and Italian seasoning to taste

Instructions 

  • In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium high heat. Cook one pound ground Italian sausage and 1 cup diced onion over medium heat until browned.
  • Add in 4 cloves minced garlic and cook for about 60 seconds, until tender and fragrant.
  • Drain excess grease if necessary.
  • Pour in 4 cups chicken broth and 14.5 ounces diced tomatoes. Season with ยฝ teaspoon each of salt, pepper, and red pepper flake, and 1 teaspoon of Italian Seasoning.
  • Add 1.5 cups pasta and cook for about 8-10 minutes, or until pasta is al dente.
  • Stir in 1 cup heavy cream, and ยฝ cup finely grated Parmesan cheese. Simmer for 2-3 minutes until cream and cheese are well combined.
  • Adjust to taste with additional salt and pepper if needed. Garnish with fresh basil and serve hot.
