Cilantro Lime Rice made in the Instant Pot is quick, flavorful, and ready in minutes!

I’m going to blame Chipotle for this one, but any time I think of having rice paired with fajitas, burritos, or tacos, it is ALWAYS cilantro lime rice. Chipotle may not have come up with the classic combo of ingredients, but I’m fairly certain it was at Chipotle that I tried it first and fell in love. This version of cilantro lime rice is made in the Instant Pot and is so quick and convenient! You’ll end up with fluffy cilantro and lime infused rice with minimal effort and time. Enjoy!

How to Make Cilantro Lime Rice in the Instant Pot

  1. Rinse the rice. I use long-grain white rice. Add the rinsed rice to the instant pot along with water or broth and butter and stir to combine.
  2. Cook the rice. Cook for 3 minutes on high then naturally release the pressure and allow the instant pot to vent.
  3. Add the cilantro and lime. Stir in fresh lime juice, salt, and fresh chopped cilantro then fluff with a fork. Serve and enjoy!

Choosing Cilantro

When choosing cilantro for any recipe, here are a few things to look for:

  • Look for vibrant green leaves: Fresh cilantro should have bright green leaves without any yellowing or browning. Avoid bunches with wilted or discolored leaves, as they indicate that the herb is past its prime.
  • Check the stems: The stems of cilantro should be firm and not slimy or mushy. They should also be relatively thin, as thicker stems can be tough and fibrous.
  • Smell the cilantro: Fresh cilantro has a distinct, citrusy aroma. Give the bunch a gentle sniff to ensure that it smells fresh and fragrant. Avoid cilantro with a musty or unpleasant odor.

Rinsing Rice

The first step in this recipe is to rinse the rice in a mesh strainer until the water runs clear. The value in taking the time to do this is to remove the starch from the outer part of the rice, which then prevents it from being sticky. The result is fluffy rice and worth the extra step of rinsing it.

Instant Pot Cilantro Lime Rice

Delicious Cilantro Lime Rice made in the Instant Pot is quick and convenient and perfect with fajitas or burritos!
Prep Time: 5 minutes
Cook Time: 3 minutes
Natural Release: 10 minutes
Servings: 4

Equipment

  • 1 Instant Pot / Pressure Cooker

Ingredients 

  • 2 cups long-grain white rice
  • 2 cups cold water or chicken broth
  • 1 tablespoon butter
  • ½ teaspoon salt
  • 2 tablespoons fresh lime juice (1-2 limes)
  • ¼ cup fresh cilantro chopped

Instructions 

  • Rinse the rice – place the rice in a fine mesh strainer then rinse it under cold water until the water runs clear.
  • Add the rinsed rice to the instant pot along with water or broth and butter. Stir to combine.
  • Close the lid, set the valve to sealing, then select "Manual" or "Pressure Cook" and cook for 3 minutes on high.
  • Natural release – when the timer goes off, allow the Instant Pot to naturally release pressure for 10 minutes before setting the valve to vent to release any remaining pressure.
  • Add in fresh lime juice, salt, and fresh chopped cilantro. Stir to combine, then fluff with a fork.
  • Serve as a side dish with burritos, fajitas, tacos, etc.
