So, hereโs the deal โ Iโve got two new obsessions. And by obsessions, I mean, I just canโt get enough and it wouldnโt feel right if I kept these things to myself. I am going to do the right thing and share them with you.
#1 – This Low Carb Beanless Chili (I know, I know, chili is supposed to have beans. Even my auto-correct is not happy with beanless and has corrected the word to everything from beanies to beagles.) Iโll make my case for this beanless version in just a minute.
#2 – Getting groceries delivered right to my door by my local Jewel-Osco. Without having to get out of my comfy jammies. Without having to bundle up the 3 year old. Allllllll the groceries I need make this delicious beanless chili, right to my door. Obsessed.
This chili was born out of a need to make warm cozy fall food (because hi chilly weather!) and to try and please everyone in the house. My little guy is hit or miss when it comes to beans and Iโve been experimenting with a keto/low-carb lifestyle and trying to avoid beans, even though they are incredibly delicious. I knew chili would hit the spot, so I eliminated the beans, tweaked one of my favorite recipes for classic chili, and this comforting, family pleasinโ recipe came to life. Itโs so delicious. And it can be made in an Instant Pot, slow cooker, or on the stovetop.
With this chilly, rainy weather comes my automatic attitude of โugh! Do I really have to bundle up my little guy, and go out in the rain/cold/snow to get my grocery shopping done?โ

Low Carb Beanless Chili
Ingredients
- 2 tbsp butter or ghee
- 2 bell peppers chopped
- 1 yellow onion chopped
- 1 cup chopped celery
- 1 pound ground Italian sausage
- 1 pound ground beef
- 28 ounces diced tomatoes
- 14 ounces tomato sauce
- 2 cups beef broth
- 4-6 ounces strong brewed coffee
- 1 tbsp cumin
- 2 tbsp chili powder add more to make it spicy
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp ground oregano
- 1 tsp salt
- 1 tsp black pepper
Instructions
Stovetop Directions
- In a large skillet, melt butter over medium-high heat.
- Add chopped peppers, onion and celery and sautรฉ for 5-7 minutes until tender. Spoon the vegetables out of the pan and set aside.
- To the pot add ground beef and ground Italian Sausage. Brown the meat, then drain any excess fat.
- Return the peppers, onion, and celery to the pan.ย
- Add in diced tomatoes, tomato sauce, beef broth, and coffee. Stir to combine.
- Add in spices โ cumin, chili powder, garlic powder, onion powder, ground oregano, salt and black pepper.
- Bring to a boil, then reduce heat, cover and simmer for 1.5-2 hours.
Instant Pot Directions
- Press the "sautรฉ" button, then press the โAdjustโ button once. Wait for the indicator to say โhot.โ
- Melt 2 tablespoons butter. Add in chopped peppers, onion, and celery and sautรฉ for 5-7 minutes, until tender. Remove the vegetables from the pot.
- To the pot add in ground beef and ground Italian Sausage. Brown the meat, draining any excess liquid.
- Return the peppers, onion, and celery to the pot.
- Add in diced tomatoes, tomato sauce, beef broth, and coffee. Stir to combine.
- Add in spices โ cumin, chili powder, garlic powder, onion powder, ground oregano, salt and black pepper. Stir to combine.
- Place the lid on and pressure cook on Manual at high pressure for 20 minutes, then release manually.
Slow Cooker Directions
- In a large skillet, melt butter over medium-high heat.
- Add chopped peppers, onion and celery and sautรฉ for 5-7 minutes until tender. Spoon the vegetables out of the pan and set aside.
- To the pot add ground beef and ground Italian Sausage. Brown the meat, then drain any excess fat.ย
- Add the sautรฉed veggies and browned ground beef and ground Italian Sausage to the slow cooker.
- Add in diced tomatoes, tomato sauce beef broth, and coffee. Stir to combine.
- Add in spices โ cumin, chili powder, garlic powder, onion powder, ground oregano, salt and black pepper. Stir to combine.
- Cook on low for 6-8 hours or on high for 4-6 hours.
