Regret. I know regret is a loaded verb (or noun!) that can evoke a variety of emotions and memories (good and bad) but it’s a word I need to use today to help me describe the way I feel about….

Avocados. I know, there are so many other major things that you probably thought I’d say when referring to regret, right? There’s that saying to “live life with no regrets” yet I think we all have regrets. I think they help us make better choices and learn from our mistakes, amiright?

In this instance? I regret having shunned the avocado for far too, too long because of its unsightly (in my opinion) color. I realize now that man, I have missed out on some fabulous opportunities to incorporate avocados into my recipes for salads, smoothies, dips, and dressings, all because I thought that since the creamy flesh of avocados looks a little disgusting, that it must taste that way too. Regret.

Now that avocados have entered my life, I have learned from the regret I feel over avocados. Always give ugly foods a chance because who knows, you may actually like them. At this point in my life,  it’s impossible to have too many avocado recipes in my repertoire!

So now that we’re done talking about regret, let’s talk about this California Club Sandwich. I am always looking for sandwich ideas to prevent lunch from getting mundane. Three beautiful, perfectly ripe avocados were sitting in my fridge, so I decided to whip up a batch of The Best Guacamole which is when I decided to use it as a topping on a sandwich, something I hadn’t done before. Best. idea. ever.

I like to call this sandwich a stacker, because it’s stacked high with all kinds of meat (roasted chicken, honey ham, roasted beef, bacon), two different cheeses (swiss and cheddar), tomato, lettuce and guacamole. It’s the type of sandwich that the men in your life will adore, and you’ll enjoy it too! 

If you’re making sandwiches for a crowd, I’d recommend that you swap out the ciabatta roll and use a big loaf of french bread instead. That way you can easily cut it up into smaller pieces, perfect for feeding a crowd.

And of course I adore this recipe for guacamole, but if you are short on time, feel free to just slice up some fresh avocado instead (an avocado slicer is the best way to do this). This Ultimate California Club Sandwich is a real winner, and I’m certain you’ll enjoy it as much as we did.

INGREDIENTS

  • 1/4 pound roasted chicken or turkey deli meat
  • 1/4 pound honey ham deli meat
  • 1/4 pound roast beef deli meat
  • 4 slices of crispy, cooked bacon
  • 4 slices swiss cheese
  • 4 slices cheddar cheese
  • 4 fresh tomato slices
  • 4 lettuce slices
  • The Best Guacamole
  • 4 ciabatta rolls, toasted in the toaster

DIRECTIONS

  1. Toast four ciabatta rolls in the toaster.
  2. Divide the chicken, honey, and roast beef among the four sandwiches, arranging meat on the bottom bun.
  3. Add a slice of swiss cheese, and a slice of cheddar cheese on top of the layers of meat.
  4. Top with tomato, lettuce, and crispy cooked bacon.
  5. Spread a couple tablespoons of guacamole on the top bun.
  6. Enjoy! Serves 4.
