This Easy Mexican Lasagna layers tortillas, seasoned meat, and cheese. It’s a fun twist on classic Italian Lasagna!

There is so much to love about this Easy Mexican Lasagna Recipe! While I love traditional Italian Lasagna, I am no stranger to finding a fun new way to enjoy a layered lasagna (I’m lookin’ at you Chocolate Lasagna!). Mexican food is always a favorite in this house, and while this is by no means traditional, it incorporates flavors of some of our favorite Mexican recipes.

This recipe consists of layers of tortillas in place of pasta with a hearty meat mixture consisting of ground beef, corn and rice. Each layer is topped with melted cheddar cheese and mozzarella cheese and the result is a family-friendly easy dinner idea that’s perfect for a weeknight. Garnish Mexican Lasagna with sour cream, taco sauce, chopped tomatoes or diced green onions. There are a variety of fun and delicious ways to plate this up and serve it to your family.

Ingredients

Only a few ingredients are needed to make this Mexican Lasagna. Here’s what you’ll need, along with substitution suggestions:

  • Ground beef – ground turkey is another great option
  • Cooked rice – plain white rice, or my Cilantro Lime Rice is delicious!
  • Yellow onion – if you don’t like onion, leave this out. You can also add in chopped bell peppers or jalapeños.
  • Taco seasoning – use your favorite store-bought brand (I like Lawry’s) or use my homemade taco seasoning. You will need a one ounce packet or about 3 tablespoons.
  • Taco sauce – enchilada sauce also works here!
  • Tortillas – I prefer burrito size but use whatever you have on hand. Flour tortillas tend to hold up better than corn tortillas.
  • Corn – I use a 15 ounce can of corn. Frozen corn or fresh corn are both options.
  • Cheese – I usually use cheddar cheese but use whatever you have on hand. Pepperjack cheese is delicious, as is mozzarella!

How to make Easy Mexican Lasagna

This recipe is quick and easy to make, and it’s all ready in about 30 minutes. Here is a brief overview of how to make it. For the full written recipe, see the recipe card below.

  1. Preheat the oven and prepare a 9×13 inch casserole dish by spraying it with non-stick cooking spray.
  2. Make the meat mixture in a large skillet- ground beef or ground turkey, rice, yellow onion, corn, taco seasoning, salsa, and taco sauce or enchilada sauce.
  3. Prep the remaining ingredients – shred the cheese and cut the tortillas. You need 3-4 burrito sized tortillas or 4-6 large tortillas.
  4. Assemble the easy Mexican Lasagna – spread half of the meat mixture into the casserole dish and top with tortillas. Top with half of the cheese. Add another layer of meat, another layer of tortillas, and the remaining cheese.
  5. Bake – 15-20 minutes or until cheese is melted and bubbly.
  6. Garnish – garnish ideas include chopped tomatoes, sour cream, green onion, a drizzle of taco sauce or enchilada sauce.

Variations

Change up this recipe and make it your own. Here are a few suggestions:

  1. Meat mixture – use ground turkey or ground chicken in place of ground beef. Add in chopped bell peppers or jalepños.
  2. Cheese – I used a blend of cheddar and mozzarella cheese. Use pepper jack cheese for a spicy variation! Queso fresco is also delicious sprinkled on top.
  3. Vegetarian – in place of ground meat, make a mixture with sautéed vegetables like green peppers, onions, and mushrooms along with rice, diced green chilies, black beans and corn.

  • Store leftovers in an airtight container and place in the refrigerator.
  • Eat leftovers within 3 days.

Easy Mexican Lasagna

This Easy Mexican Lasagna layers tortillas, seasoned meat, and cheese. It's a fun twist on classic Italian Lasagna!

Cook Time: 15 minutes

Ingredients 

  • 1.5 pounds ground beef or ground turkey
  • 1.5 cups cooked rice
  • 1 cup yellow onion, chopped
  • 1 packet taco seasoning
  • ¼ cup taco sauce or enchilada sauce
  • 2 cups salsa
  • 15 ounce corn – canned, drained
  • cup water
  • 3-4 tortillas – burrito size (or 5-6 large tortillas)
  • 4 cups sharp cheddar cheese
  • sour cream, tomatoes, green onions for garnish

Instructions 

  • Preheat oven to 425 degrees F and spray a 9×13 inch casserole dish with non-stick spray.
  • Make the meat mixture: preheat a large skillet on the stove over medium high heat. Add the ground beef and onion and cook until meat is cooked through and onions are tender.
  • Drain excess grease.
  • To the meat add in 1 packet taco seasoning, 2 cups salsa, ⅓ cup water, and ¼ cup taco sauce.
  • Add in 1- 15 ounce can corn that has been drained, along with 1 and ½ cups cooked rice. Simmer for 5-6 minutes.
  • Assemble the Mexican Lasagna: pour half of the meat mixture on the bottom of the casserole dish. Top with a layer of tortillas. Spread half of the cheese on top of the meat mixture. Add remaining meat mixture on top of the cheese, then add another layer or tortillas and top with the remaining cheese.
  • Bake for 15 minutes or until cheese is melted and bubbly.
  • Garnish with tomatoes, green onions, sour cream, and taco sauce or enchilada sauce.
