There is something about a cake made with soda that appeals to me. It is like the most indulgent way to make dessert. I never had a cake like that as a kid. I never even heard of it until well after college, but I was kind of hooked the moment I was introduced.
It’s such a simple treat that only takes a few ingredients and tastes incredible. The way its made reminds me a bit of a red velvet cake, minus the food coloring. And it tastes twice as good, if you can even imagine!
For those of you who may not have had coca cola cake before, it doesn’t taste like a can of soda in cake form. I think it is sweeter than your typical cake, but not too much so. It does lent the of the distinctive coca cola flavor, but it is complemented by chocolate, which is the predominant flavor. My favorite part is the cola icing which does have more of a soda taste, but in a really good way.
CAKE INGREDIENTS
- 1 cup granulated sugar
- 1 packed light brown sugar
- 1 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup coca cola
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup vegetable oil
- 1/3 cup cocoa powder
- 1/2 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 2 large eggs
TOPPING INGREDIENTS
- 1/2 cup (1 stick) unsalted butter
- 1/4 cup cocoa powder
- 1/3 cup coca cola
- 1 teaspoon vanilla extract
- 3 1/2 cups powdered sugar
DIRECTIONS
- Preheat the oven to 350 degrees F. Grease and flour a 9 x 13 baking pan.
- In a large bowl, mix together both sugars, flour, and salt together for the cake.
- In a saucepan, add the soda, butter, oil, and cocoa powder. Heat on medium until the butter melts and stir well to completely combine the ingredients.
- Stir the soda mixture into the flour mixture and mix until well-combined.
- Stir the buttermilk, baking soda, and vanilla together, then beat into the flour mixture.
- Beat in the eggs. until well combined.
- Pour the batter into the baking pan and bake for about 35 – 40 minutes, or until a toothpick comes out clean.
- While the cake is baking, make the icing. Add the butter, cocoa powder, and soda into a saucepan and bring to a boil. Remove from heat and allow to cool slightly. Add in the vanilla and powdered sugar and mix well.
- When the cake is out, pour over the cake while the cake is still hot.
- Allow to cool completely before cutting and serving
