- Chicken breasts: use medium-sized chicken breasts (about 6-8ounces). Large chicken breasts (about 10-12 ounces) should be cut in half length-wise.
- Cheese: I use Swiss cheese but feel free to use whatever you have on hand — cheddar, pepper jack, Colby jack, mozzarella are all great options.
- Cream soup: cream of mushroom, cream of chicken or my cream soup substitute
- Stuffing mix: I use a 6 ounces box of Stove Top Stuffing — any flavor will work.

Crockpot Chicken and Stuffing with Cheese
Ingredients
- 4-6 chicken breasts (boneless skinless, about 6-8 ounces each)
- 6 slices Swiss cheese or your favorite cheese (about one slice per piece of chicken)
- 1 10.5 oz can cream of mushroom soup
- ⅓ cup milk
- 1 box stuffing mix (6 ounces – like Stove Top)
- ¼ cup butter, melted (4 tablespoons)
- Non-stick cooking spray
Instructions
- Prep the slow cooker: Spray the inside of your slow cooker with non-stick cooking spray.
- Spray the inside of your slow cooker with non-stick cooking spray.
- Layer the chicken and cheese: Arrange 4–6 boneless, skinless chicken breasts in a single layer on the bottom of the slow cooker. Place 1 slice of Swiss cheese on top of each piece of chicken.
- Make the sauce: In a small bowl, whisk together 1 can of cream of mushroom soup and 1/3 cup milk until smooth. Pour the mixture evenly over the chicken and cheese.
- Add the stuffing and butter: Sprinkle 1 box of dry stuffing mix evenly over the top. Drizzle ¼ cup melted butter evenly over the stuffing mix to help it brown and stay moist.
- Cook: Cover and cook on Low for 4–6 hours or High for about 3 hours, until the chicken is tender and cooked through.
