Rotel Dip Ingredients

  • Sausage: Ground pork sausage adds the perfect spice to this Rotel dip recipe. See some alternatives below.
  • Rotel: Rotel is a brand of canned tomatoes with green chilies. Manage the spice level by choosing between mild, medium, or hot Rotel diced tomatoes and green chilies. Be sure not to drain the can, you will add the juice to the dip.
  • Chopped green chiles: While there are green chilies in Rotel, we add more to the dip by adding a can of chopped green chiles.
  • Velveeta: The processed cheese melts to create the delicious creamy texture of the dip.
  • Taco seasoning: The perfect blend of spices in this dip, you can use a packet of taco seasoning or make your own. Homemade taco seasoning is great to keep on hand and adjust to your liking, leaving out any extra preservatives and sweeteners of the storebought packets!

How to Make Rotel Dip

Here is a brief overview of how this easy dip comes together. For the full recipe including all measurements, see the recipe card at the bottom of the post.

  1. Cook the sausage. Break it apart into bite-sized pieces while it cooks until the meat is cooked through. Drain any excess grease.
  2. Add the Rotel with liquid and a can of chopped green chiles. Stir to combine.
  3. Add the cheese. Cut Velveeta into slices or cubes and add it to the skillet. Stir until the Velveeta has melted and is well combined.
  4. Serve and enjoy!

Add small splashes of milk as needed to thin the dip out and keep it creamy. Stir it in thoroughly before adding more.

Crockpot Rotel Dip

This dip can also be made in your slow cooker! This is a great option if you are hosting and want to make it ahead of time and keep it warm.

  1. In a large skillet over medium high heat, break apart the ground pork sausage into bite sized pieces until it’s cooked through. Drain excess grease.
  2. Transfer the cooked sausage to the slow cooker. Stir in the remaining ingredients.
  3. Cook on high for 1-2 hours, or until the cheese is melted. Stir well to combine. Keep on the warm setting for up to two hours.

Easy Rotel Dip with Sausage

Rotel Dip with sausage and velveeta cheese is an easy dip that pairs perfectly with tortilla chips!

Cook Time: 15 minutes
Servings: 8

Ingredients 

  • 1 lb ground pork sausage
  • 10 oz Rotel Original Diced Tomatoes and Chilies, undrained
  • 1 4 oz can chopped green chiles
  • 32 oz Velveeta
  • 1 packet taco seasoning (1 ounce)
  • milk as needed to thin out the dip

Instructions 

  • In a large skillet over medium high heat, add in ground pork sausage. Break apart into bite sized pieces and cook until the meat is cooked through. Drain excess grease.
  • Add in one can Rotel with liquid and a 4 ounce can of chopped green chiles.
  • Cut Velveeta into slices or cubes, then add to the skillet. Over medium high heat, stir until the Velveeta has melted and is well combined.
  • Stir in 1 packet taco seasoning until well combined.
  • Serve with tortilla chips, pretzels, and/or fresh veggies.

Slow Cooker Instructions

  • In a large skillet over medium high heat, add in ground pork sausage. Break apart into bite sized pieces and cook until the meat is cooked through. Drain excess grease.
  • Transfer the cooked sausage to the slow cooker. Stir in the remaining ingredients.
