When I think of desserts for hot summer days, there are a few that always come to mind — key lime pie, Frozen Pink Lemonade Pie, or this creamy, delicious 4-Ingredient Lemon Pie. Sometimes it’s also known as lemon icebox pie. If I had to choose just one, I couldn’t! They are all so delicious!

While today’s recipe for Lemon pie is simple, it’s bursting with tangy lemon flavor and tastes just like summer. You’ve gotta try it! Let’s make it together. ❤️-Ashley

4 Ingredients for Lemon Pie

Only 4 simple ingredients separate you from this delicious Lemon Pie, aside from from pre-made graham cracker crust.

  1. Sweetened Condensed Milk – the base of the lemon pie filling. It’s creamy and sweet!
  2. Egg yolks – used to bind, thicken and add creaminess and color (save the egg whites for meringue, angle food cake, or macarons!)
  3. Fresh lemon juice – fresh lemon juice is the star of the show here. I like to use a fine mesh strainer to strain the fresh lemon juice to ensure that there aren’t any lemon seeds or pulp in my pie.
  4. Cool Whip – this is found in the frozen dessert section at the grocery store.

Optionally, you can add the zest from one lemon. Lemon zest is the outermost peel of the lemon – the bright yellow part. It contains essential oils and smells amazing. Using lemon zest will help intensify the lemon flavor in this pie, but it’ll also amplify the scent of lemon. Use a microplane grater to zest your lemon. Don’t forget to zest the lemon before you juice it.

How many lemons will I need for 3/4 cup fresh lemon juice?

The average fresh lemon yields about 2-3 tablespoons of fresh lemon juice. You will need 4-6 lemons to yield 3/4 cup fresh lemon juice. Remember that the number of lemons needed will vary depending on the size and how juicy the lemon is.

Graham Cracker Crust Recipe

While I generally prefer to buy a pre-made store-bought graham cracker crust as a time-saving hack, feel free to make your own graham cracker crust. The full instructions are below in the recipe card, but here is a brief overview. You’ll need:

  • 1 ½ cups graham cracker crumbs (about 10-12 graham crackers)
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted.

To make the graham cracker crust for this lemon pie:

  1. Preheat the oven – 350 degrees Farenheit
  2. Crush the graham crackers – use a rolling pin or a food processor
  3. Combine – in a bow combine the graham cracker crumbs with the sugar and butter. Mix to combine.
  4. Press – in a 9 or 10 inch pie dish, use your fingers or the back of the spoon to firmly press the crust mixture into the pie plate.
  5. Bake

With the crust made, now you’re ready for the filling.

How to make Creamy Lemon Pie Filling

The instructions for this creamy lemon filling couldn’t possibly be any easier.

  1. In a large bowl, whisk together sweetened condensed milk, fresh lemon juice, and egg yolks.
  2. Add in Cool Whip and lemon zest (optional), then whisk until smooth.
  3. Pour into graham cracker crust.
  4. Bake
  5. Bring to room temperature
  6. Chill – this pie is best served cold.

It will take about an hour for the pie to come to room temperature, and then you will place it in the refrigerator for at least 2-3 hours or overnight to chill. After it has chilled, you can choose your own adventure – either serve as is, or topped with whipped cream and garnish with lemon slices.

Top with Whipped Cream

I love to serve this pie with homemade whipped cream. This is totally optional but it’s delicious. To make whipped cream you’ll need:

  • heavy whipping cream
  • powdered sugar
  • vanilla extract

In place of vanilla extract, you could use lemon extract to make lemon whipped cream!

Before making whipped cream, I like to freeze the bowl and whisk for about 15 minutes before starting so that they are exceptionally cold.

To make whipped cream:

  1. Add heavy cream to the bowl, and beat on medium speed until the cream starts to thicken. This happens in 1-2 minutes.
  2. Add in powdered sugar and vanilla or lemon extract, then continue whipping on high until stiff peaks form.

If you over whip the whipped cream, it’ll turn to butter.

Lemon Pie with Graham Cracker Crust

Ingredients 

  • 2 cans sweetened condensed milk 14 ounces each, 28 ounces total
  • 3 egg yolks (large)
  • 3/4 cup fresh lemon juice about 4-6 lemons
  • ½ cup Cool Whip
  • 1 graham cracker crust store-bought
  • zest from 1 lemon optional

Graham Cracker Crust Ingredients

  • 1 ½ cups graham cracker crumbs about 10-12 graham crackers
  • ¼ cup granulated sugar
  • ½ cup butter, unsalted, melted

Homemade Whipped Cream

  • 1 cup heavy cream (cold)
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla or lemon extract

Instructions 

  • Preheat oven to 350 ℉
  • In a large bowl, whisk together sweetened condensed milk, fresh lemon juice and egg yolks.
  • Add in Cool Whip and lemon zest (optional) then whisk until smooth.
  • Pour into graham cracker crust (if using store-bought).
  • Bake for 20 minutes.
  • Cool for 1 hour until the pie comes to room temperature, then chill in the refrigerator for at least 2-3 hours, or overnight.
  • This pie is best served cold.
  • Top with whipped cream *optional

Graham Cracker Crust Instructions

  • Preheat oven to 350 ℉
  • Crush the graham crackers in a food processor or with a rolling pin.
  • Combine the graham cracker crumbs with sugar and butter. Mix to combine.
  • Press into a 9 or 10 inch pie dish. Use your fingers or the back of a spoon to firmly press the crust mixture into the pie plate.
  • Bake for 8-10 minutes or place in the refrigerator for 30 minutes to set the crust.

Homemade Whipped Cream Instructions

  • Chill your mixing bowl and beater or whisk attachment for 15-20 minutes.
  • Add heavy cream to the bowl, and beat on medium speed until the cream starts to thicken. This happens in 1-2 minutes.
  • Add in powdered sugar and vanilla or lemon extract, increase speed to high and whip until stiff peaks form. Do not over-whip. When stiff peaks have formed, turn the mixer off.
